gg bites are simple, 昀氀avorful, and versatile.
They may be small, but they are very
satisfying. If you need a quick breakfast or a
protein-昀椀lled snack, these 昀氀u昀昀y, savory bites o昀昀er
the comfort of a classic egg dish in a handy, portable
form. They are light, easy to customize, and can be
made ahead of time. You can add anything you like,
from fresh vegetables and herbs to rich cheeses
and meats.
This recipe uses wholesome ingredients and an
easy method to make a dish that is both nourishing
and a little indulgent. Egg bites are great for busy
mornings, brunch with friends, or meal prep. They
show that even a small dish can bring a lot of
enjoyment.
Ingredients
• 9 large eggs
• ½ cup shredded cheese (your choice)
• ¾ teaspoon garlic powder
• ½ teaspoon salt
• ¼ teaspoon freshly ground black pepper
• 1½ cups chopped baby spinach
• ½ cup diced seeded red bell pepper
• 1 tablespoon chopped chives (plus more to
serve)

Directions
• Preheat the oven to 400°F. Grease a 12-cup
mu昀케n pan.
• Combine the eggs, cheese, garlic powder, salt,
and black pepper in a blender. Blend on high for
20-30 seconds until the mixture is frothy. If you
do not have a blender, you can whisk the mixture
well in a large bowl.
• Divide the chopped spinach, chives, and bell
pepper evenly among the mu昀케n cups. Pour the
egg mixture over the vegetables, 昀椀lling each
cup about three-quarters full.
• Bake for 16 to 18 minutes, until the eggs are set
and the edges are golden. Let them cool on a
wire rack for about 5 minutes. Use a butter knife
to loosen the edges and remove the egg bites.
Serve while warm.
You can change up these egg bites with many
di昀昀erent ingredients. Here are some ideas to make
them your own:
Cheeses: Try adding a tablespoon of goat cheese
for a creamy texture, or use shredded cheddar,
Parmesan, or crumbled feta. Vegetables: Mix in
cooked broccoli, diced kale, roasted red pepper,
chopped sun-dried tomatoes, corn, or any other
vegetables you like. Proteins: Add cooked bacon,
diced ham, sausage, or shredded chicken. Spices:
